Honeydew is produced by a native scale insect in our forests as it feeds on the sap of the native New Zealand Black Beech tree. The scale insects produce a sugary droplet that is left on the outside bark of the beech tree on the end of long tubules, which is then collected by honey bees and made into honey. It is responsible for the sweet smell common inside our beech forests.

The sugars of honeydew are more complex than normal honey, since two insects (the scale insect and the honey bee ) are involved in its production. It is a dark honey with a complex aroma and flavour. In Europe in particular, honey dew is often regarded as a natural delicacy.
